Cooking adventures: pasta salad

Despite my banana muffin catastrophe, my mother is still trusting me to do some cooking.

Well, she was kind of forced to tonight.

My mom teaches kindergarten, and every year, she makes alphabet pasta salad and takes it into her class. I knew cooking was a possibility–she had a meeting and thought she’d get home too late–but tonight’s cooking adventure was for a different reason.

Her car died.

Okay, I’m being a tad dramatic. My dad thinks it’s a problem with the starter, and it’s at the shop now. So, that left me to make the pasta salad while my parents got everything with the car figured out. It’s also kind of hard for my mom to cook while she’s waiting for a tow truck one town over.

This is a recipe even I shouldn’t have problems with, which is probably why my mom left me in charge of it. (Although, let’s face it. She probably didn’t think I’d struggle with banana muffins.)

It has two ingredients: one pound alphabet pasta and 1/3 cup Italian dressing.

The recipe itself can be broken down into a few incredibly simple steps:

  1. Boil four quarts of water
  2. Pour in pasta
  3. Wait for the water to boil again, then cook the pasta for 4-6 minutes or until tender
  4. Drain the pasta
  5. Return the pasta to the pan and stir in 1/3 cup of Italian dressing
See? So easy, even a space cadet ginger could do it. Oh, wait.

I made a double recipe, since my mom teaches two sections, but I had to cook each box separately because the colander apparently cannot hold two pounds of pasta. (Go figure. Don’t worry, my mom warned me about that beforehand, so I didn’t have to figure it out for myself… which would’ve involved me spilling two pounds of pasta down the sink.)

Tonight’s problems: One. My water boiled over. Oops.
Cooking outcome: SUCCESS. Hey, I know pasta is simple. But you gotta start somewhere.
This post is dedicated to a certain Kristi Brandon, who loves this salad as much as I do. Love you, K.
